Lime Grilled Shrimp with Mango Salsa

Ingredients
- 12 large shrimp
- 1/3 cup + 1 tablespoon Fustini's Persian Lime olive oil, divided
- 2 tablespoons Fustini's Cayenne Crush olive oil
- 2 tablespoons Fustini's Jalapeno Lime balsamic
- Kosher salt & freshly ground black pepper
- 1 mango
- 1/2 red onion
- 1/4 cup cilantro
- 1 teaspoon Fustini's Mango balsamic

- Place shrimp, 1/3 cup Persian lime olive oil, Cayenne Crush olive oil, lime balsamic, salt, and pepper in a small bowl. Cover and chill for 30 minutes.
- Peel and dice the mango and onion as finely as possible. Chop cilantro and add to the mango and onion with the Mango balsamic and 1 tablespoon of lime oil.
- Remove shrimp from the marinade and grill over high heat for a minute or two on each side until they turn from translucent to opaque. Remove shrimp to a serving dish and top with salsa.
