Ingredients
- 2 medium-large Heirloom tomatoes, sliced 1/2" thick

2-4 tablespoons of Fustini's Basil Crush olive oil
- Kosher salt & freshly ground black pepper
- 3-4 oz fresh mozzarella
- 8-10 fresh basil leaves
- 4 slices of seedy bread

Directions
- Preheat the oven to 325 degrees F. Place tomato slices on a nonstick baking sheet and drizzle with 2 tablespoons of olive oil, salt, and pepper. Roast in the oven for 45 minutes.
Heat a large griddle or skillet over medium heat. Brush the outsides of each bread slice with the remaining olive oil. Place the oil side of 2 slices in the skillet. Place some of the mozzarella slices on top of each slice, followed by some tomatoes and some basil. Add more tomatoes and top with more mozzarella. Top with remaining slices of bread (oil side out.). Cook until cheese is melty and each side is golden, about 5 minutes per side. Remove from heat and drizzle with balsamic glaze before serving.
