Ingredients
- 2 large bunches of arugula (mix with a combination of baby spinach if desired)
- 1/2 pint strawberries, quartered
- 1 tablespoon Fustini's Citrus Oregano balsamic
- 1 teaspoon sugar
- 1/4 cup sliced almonds
- 1/4 cup shaved Manchego cheese
- 1 tablespoon Fustini's Meyer Lemon Olive Oil
Directions
- Macerate the strawberries by placing them in a bowl and tossing them with the sugar and balsamic. Meanwhile, place the almonds on a sheet tray and bake in a 350-degree oven until golden brown, stirring every 2-3 minutes. When the almonds are done, place the arugula in a bowl, add the almonds and manchego cheese followed by the strawberries. Add the Meyer Lemon olive oil, season with salt and pepper, toss and serve.
