Ingredients
- 1/2 pound arugula
- 1 Asian pear, thinly sliced
- 1/4 cup crumbled goat cheese
- 1 shallot, minced
- 1/3 cup Fustini's 18 Year Traditional balsamic
- 1 teaspoon Dijon mustard
- 2 tablespoons chopped chives and parsley
- 1/2 cup Fustini's Delicate SELECT olive oil

Directions
- Whisk together shallot, balsamic, mustard and herbs with a pinch of salt and ground pepper. While whisking, drizzle olive oil into the vinegar mixture to form a creamy emulsion. Taste the balance of olive to vinegar with an arugula leaf and a slice of pear. Adjust accordingly.
- Lightly dress arugula and pears in a medium bowl. Plate salad and top with pears and crumbled goat cheese.
