Bacon Wrapped Filet with Balsamic Red Wine Reduction

Ingredients
- 2 half-pound mignon filets
- 2 slices bacon
- 2 teaspoons Fustini's Robust SELECT olive oil
- 1 clove garlic, minced
- 1/4 cup Fustini's Espresso Bean balsamic
- 1/4 cup red wine
- salt and pepper to taste
- 2 small sprigs of rosemary

- Prepare grill. Place garlic and Fustini&rsquo,s Single Varietal Extra Virgin Olive Oil in a small saucepan and sauté, over medium-low heat until garlic starts to get soft. Add Fustini&rsquo,s balsamic and red wine, stirring constantly until liquid is reduced by half.
- Wrap each filet around the perimeter with bacon slices, securing the bacon with toothpick. Lightly salt and pepper the filet. Grill to medium rare (about 5 minutes each side). Remove toothpicks and drizzle the top with balsamic wine reduction. Garnish with sprig of rosemary.
