Ingredients
- 1 tablespoon Fustini's Medium SELECT olive oil
- 1 medium onion, chopped
- 1 celery stalk, chopped
- 3 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- 2 tablespoons Fustini's Vinoso vinegar, divided
- 2 lbs ground beef
- 1 cup shredded cheddar
- 1/2 cup almond flour
- 1/4 cup grated parmesan
- 2 eggs
- Kosher salt and fresh ground pepper to taste
- 6 thin strips of bacon

- Preheat oven to 400 degrees F. In a medium skillet over medium heat, heat olive oil. Add onion and celery and cook until soft 5 minutes. Stir in garlic, oregano and chili powder and cook until fragrant, 1 minute. Turn off heat and deglaze the pan with 1 tablespoon vinegar and allow the mixture to cool slightly.
- In a large bowl, combine ground beef, vegetable mixture, cheese, almond flour, Parmesan, eggs, remaining vinegar and season with salt and pepper. Shape into a large loaf in the baking dish and lay the bacon slices over the top.
- Cook until the bacon is crispy and beef is cooked through (internal temperature reaches 165 degrees F), about 1 hour. If bacon is cooking too quickly, cover dish with foil. When done, remove and allow to rest 5-10 minutes before slicing.
