Baked Chicken with Tomatoes

Ingredients
- 4 tablespoons Fustini's Medium SELECT olive oil, divided
- 1 red onion, sliced in large rings
- 4 skinless chicken breasts
- 1 14-ounce can diced tomatoes, drained (or 4-5 fresh tomatoes)
- garlic powder to taste
- 2 tablespoons Fustini's Riserva balsamic
- 1/2 cup grated Parmesan cheese or crumbled feta cheese

- Preheat oven to 425 degrees. Coat a 9 x 13 baking dish with 2 tablespoons of olive oil. Spread onions in the bottom of the dish and top with chicken breasts.
- In a bowl combine tomatoes, garlic powder, balsamic and remaining olive oil. Pour mixture over chicken and top with cheese. Bake 30 minutes or until the chicken is thoroughly cooked (internal temperature reaches 165 degrees). If using feta cheese, add a pinch of oregano and black olives.
