Baked Eggs with Garlic Bread Crumbs

- 6 ounces of fresh spinach
- 8 ounces of Fontina cheese, freshly grated
- 8 large eggs
- Kosher salt and freshly ground black pepper
- 2 tablespoons half and half
- 2 tablespoons Fustini's Herbs de Provence olive oil
- 1 garlic clove, minced
- 1/2 cup panko breadcrumbs
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh cilantro
- 1 tablespoon chopped fresh parsley
Directions
- Preheat the oven to 400 degrees F. Spray a 9x13" baking dish with nonstick spray.
- Layer the fresh spinach evenly on the bottom of the baking dish. Add 1/2 of the Fontina cheese and then randomly crack the eggs over the top. Sprinkle the eggs with salt and pepper and then drizzle the half and half over the top. Cover the mixture evenly with the remaining cheese.
- Place the baking dish in the oven and bake for 20 to 25 minutes. Add the olive oil to a small bowl and add the garlic and stir for another minute. Stir in bread crumbs and toss well to coat. Cover the dish with the bread crumbs and cook for 5 minutes more until the eggs are done and the bread crumbs are slightly golden.
Recipe Note
It helps to crack each egg into a bowl before adding it to the spinach. Substitute your favorite herb-infused olive oil. Adapted from "Seriously Delish."
