Beef Spinach Tortellini Skillet

Ingredients
- 1 tablespoon Fustini's Tuscan Herb olive oil
- 1/2 yellow onion, diced
- 1 pound lean ground beef
- 1 tablespoon Fustini's Grilling spice rub
- 1 tablespoon Fustini's Sicilian Lemon balsamic
- 1 1/2 cups beef broth
- 1 - 19 oz pkg frozen cheese tortellini
- 2-3 cups roughly chopped spinach
- 1 cup shredded mozzarella cheese
- Green onion or parsley, chopped for garnish

- In a large skillet or Dutch oven, heat olive oil. Add onion and cook until softened and translucent. Add ground beef, crumble and cook until no longer pink. Stir in seasoning until well mixed. Drizzle in balsamic to the pan and stir well.
- Stir in beef broth and bring to a boil. Add tortellini and mix well. Return to a boil. Reduce heat, cover, and simmer for 3 minutes. Add spinach, stir well, cover and simmer for 1-2 minutes more until the tortellini is done and the spinach is wilted. Remove from heat, sprinkle with cheese, and cover once more to melt the cheese.
Recipe Note
Serve with garlic bread and a side salad for a quick and delicious meal.
