Blackberry Glazed Chicken

Ingredients
- 1 (6-ounce) package of blackberries
- 1/4 cup water

2 tablespoons Fustini's Persian Lime olive oil
- 1 tablespoon whole-grain mustard
- 4 chicken breasts
- Kosher salt and black pepper
- Fresh, flat-leaf parsley
Directions
- Heat grill to medium. In a small saucepan, combine blackberries, water, and vinegar. Simmer, mashing occasionally, until liquid is reduced to about 2 Tbsp., 18 to 20 minutes. Stir in olive oil and whole-grain mustard. Transfer half the glaze to a bowl, reserve.
Meanwhile, pat the chicken dry, rub with olive oil, and season with kosher salt and black pepper. Grill, covered, 10 minutes. Uncover, baste with some of the glaze, and grill, turning and basting occasionally, until cooked through, 10 to 12 minutes. Sprinkle with fresh flat-leaf parsley and serve with the remaining glaze.
Recipe Note
Making a blackberry glaze is easy as the berries break down quickly. Great on wings or drumsticks as an appetizer! For a more Asian-inspired flavor, substitute Ginger & Honey balsamic and add a little fresh ginger and a splash of Sesame oil. Adapted from countryliving.com
