Blood Orange Apple Cobbler (vegan)

- 5 medium apples, cored and cut into bite-size pieces
- 2 tablespoons water
- ¼ cup brown sugar
- 2 teaspoons cinnamon
- ½ teaspoon ground cloves
- 1 teaspoon nutmeg
- 3 tablespoons Fustini's Maple balsamic (or Fustini's Cinnamon Pear balsamic)
- 1 cup AP flour
- ¾ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- ¾ cup oat milk (or any milk substitute)
- ¼ cup Fustini's Blood Orange olive oil

- Preheat oven to 375 degrees. In a medium saucepan over medium heat, add water, apples, brown sugar, spices, and balsamic. Cook until apples become semi-soft. Remove from heat.
- In a medium bowl, whisk together flour, granulated sugar, salt, and baking powder. Whisk in milk until all lumps are gone.
- In a 9&rsquo, cast iron skillet, heat olive oil until just warm. Add the batter and smooth out. Top with the apple mixture, including all juices. Bake for 20-25 minutes or until the top is golden brown. Serve warm with a non-dairy ice cream.
