Breakfast Bacon Bombs

Ingredients
- 1 tablespoon Fustini's Herbs de Provence, plus more for greasing
- 4 eggs
- 2 tablespoons milk
- 1 cup chopped bacon
- 3/4 cup shredded cheese
- 1/4 cup chopped scallions
- 1 tube refrigerated biscuits

- Preheat the oven to 350 degrees F. In a small bowl, whisk eggs and milk and add to a medium skillet, with olive oil. Cook eggs until done.
- Roll out each biscuit to about 6-8" in diameter. Divide the eggs, cheese, bacon, and scallions (and any other add-ins) among the 8 discs. Fold up two opposite ends of the discs and pinch to close. Pinch all the way down each side of the biscuit to seal the ingredients inside.
- Add more olive oil to a rimmed baking sheet. Roll each 'bomb' in oil on the sheet to coat and place them seam side down. Bake for 12-15 minutes until golden brown.
