Brunch Waffles with Orange Pecan Butter and Honey Yogurt Sauce

Ingredients
- 2 egg yolks
- 2 cups milk
- 2 cups flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/3 cup Fustini's Delicate SELECT olive oil
- 2 egg whites
- 1 cup Greek yogurt
- 2-4 tablespoons honey
- 2 tablespoons apricot preserves
- 1 tablespoon Fustini's Vinoso Vinegar
- 1 stick butter, soft
- 1 tablespoon Fustini's Cara Cara Vanilla balsamic
- 2 tablespoons powdered sugar
- 2 tablespoons fresh orange juice
- zest of 1/2 orange
- 1/2 cup toasted pecans, chopped

Directions
- Prepare a Belgian Waffle Maker. Whisk together egg yolks, flour, milk, baking powder salt, and olive oil. Whisk egg whites to stiff peaks and fold into batter. Cook waffles according to the manufacturer's direction until crispy.
- Whisk together yogurt and honey. Combine apricot preserves and vinegar. Swirl preserves into yogurt and serve with fresh fruit.
- Mix all together then roll into a tube, cover with film wrap and refrigerate until firm. Cut into silver dollar size portions to use.
