Ingredients
- 1/2 cup Fustini's 18 Year balsamic, plus more for garnish
- 2 tablespoons honey
- 1 1/2 tablespoons wholegrain mustard
- 3 garlic cloves, minced
- Kosher salt and fresh ground black pepper
- 2 tablespoons Fustini's Tuscan Herb olive oil
- 4 boneless center-cut pork chops
- 8 slices fresh mozzarella
- 1/4 cup freshly chopped basil leaves
- 2 large red tomatoes, sliced
Directions
- Preheat oven to 375 degrees F. In a large bowl, combine balsamic, honey, mustard and garlic. Season with salt and pepper. Whisk until combined. Add pork chops and toss until fully coated. Transfer to the refrigerator to marinate 20 minutes up to 1 hour.
- In an oven-safe skillet over medium heat, heat olive oil then add pork chops. Sear until golden, 4 minutes on each side.
- Top each pork chop with sliced mozzarella and tomato. Place the skillet in the oven and cook until the pork is done (the internal temperature at least 145 degrees). Remove from pan and transfer to a serving platter. Add basil and season with salt and pepper. Drizzle with more balsamic and serve immediately.
