Caramelized Baked Apples with Walnut Filling

- 4 apples, juicy ones
- ¾ cup water
- 2 teaspoons cornstarch
- Vanilla ice cream, for serving (optional)
- 1 cup walnuts or pecans, chopped
- 2 tablespoons maple syrup
- 1 tablespoon Fustini’s Red Apple or Cinnamon Pear balsamic
- 1 teaspoon cinnamon
- ⅛ ground clove
- ½ cup brown sugar, packed
- 5 tbsp unsalted butter, melted (can substitute vegan butter)
- Pinch of salt

- Preheat oven to 350. Mix filling ingredients together then set aside while you prep the apples - it will firm up and become scoopable (pop in fridge to quick process).
- Cut the apples in half through the core then use an ice cream scooper, spoon, or small knife to scoop out of the core. Place apples in a baking dish so they are reasonably snug - you don&rsquo,t want heaps of space around them. Pile Filling in the apples.
- Mix cornstarch with a splash of water and mix to dissolve thoroughly, then add the remaining water. Pour around the apples. Cover with foil, and bake for 20 minutes. Remove foil, then bake a further 20 minutes until the crumb is deep gold the apples are tender (but not sloppy soft) and there&rsquo,s a syrupy caramel in the pan (it thickens as it cools). To serve, spoon over caramel sauce, then top with ice cream and serve with more sauce!
