Catalan Grilled Vegetable Salad

Ingredients
- zucchini, thick slice
- bell pepper, halved and cored
- 3 ripe tomatoes, wedges
- red onion, wedges
- eggplant, peeled, sliced, salted, washed, dried
- Fustini's Medium SELECT olive oil
- Salt and freshly ground black pepper
- 2 tablespoons Fustini's Vinoso red wine vinegar
- 2 garlic cloves, minced
- 1 tablespoon parsley, chopped
- salt and pepper
- 1-2 tablespoon Fustini's Delicate SELECT olive oil

Directions
- Prepare a hot grill. Place all vegetables on dry grill and cook over direct heat until lightly charred. Carefully turn over and char briefly on the other side. Place vegetables into a bowl and drizzle with olive oil then season with salt and pepper. Serve hot with dressing drizzled over top.
- Whisk or shake to emulsify and use immediately.
