Cheesy Bacon Butternut Squash

Ingredients
- 2 lbs. butternut squash, peeled and cut into 1" pieces
- 2 tablespoons Fustini's Herbs de Provence olive oil
- 2 garlic cloves, minced
- 2 tablespoons chopped thyme
- Kosher salt and fresh ground pepper to taste
- 1/2 lb. bacon chopped
- 1 1/2 cups shredded mozzarella
- 1/2 cup freshly grated parmesan
- Chopped fresh parsley for garnish

- Preheat oven to 425 degrees. In a large oven-proof skillet (or baking dish), toss butternut squash with olive oil, garlic and thyme. Season with salt and pepper and scatter the bacon pieces on top. Bake until the squash is tender and the bacon is cooked through 20-25 minutes.
- Remove the pan from the oven and top with mozzarella and parmesan cheeses. Bake for another 5-10 minutes or until the cheese is melty. Garnish with parsley and serve warm.
