Cheesy Broccoli and Chicken Foil Packet

Ingredients
- 1 cup instant rice
- 1 cup chicken stock or broth
- 1 package Italian chicken or chicken smoked sausage
- 3 cups broccoli florets
- 1 large onion, finely diced
- 1/4 cup Fustini's Gremolata olive oil
- 1 tablespoon Fustini's Citrus Oregano balsamic
- 1 tablespoon Fustini's Parmesan Spice blend
- 1 cup cheddar cheese, grated
- fresh parsley for garnish
Directions
- Mix together the uncooked instant rice and chicken stock in a large bowl and let stand for 10 minutes. Do not cook or drain rice. Preheat the oven or grill to 400 degrees F. Tear off 4 sheets of aluminum foil about 2' long.
- After 10 minutes, add onion, broccoli, and sausage to the rice bowl. Add olive oil, balsamic, and seasonings. Gently stir until all ingredients are well combined and incorporated.
- Divide the mixture evenly among the 4 sheets of foil (about 1 1/2 cups per packet). Seal foil packets by bringing the sort sides together in the middle and gently fold down, then roll up the ends. You want them sealed, but with enough room for steam to circulate.
- Place on a sheet pan and place in the oven for 25 minutes, (Grill for 15-20 minutes, flipping 1/2 way through cooking, campfire - check every 3-5 minutes for doneness) until rice is cooked and veggies are crisp-tender.
- Carefully open the packets divide the cheese between packets and gently tent the foil over the veggies (not allowing the foil to touch the cheese). Let stand for 3-4 minutes until the cheese melts. Garnish with parsley and serve.
