Ingredients
- 6 tablespoons Fustini's Basil Crush olive oil, divided
- 1 small onion, chopped
- 2 garlic cloves, minced
- 2 broccoli heads, cut into small florets
- 3 cups diced chicken
- 2 tablespoons Fustini's Citrus Oregano balsamic
- 2 (10.5 oz) cans cream of chicken soup
- 1 cup milk
- 1 1/2 cups shredded cheddar cheese
- Kosher salt & freshly ground black pepper
- 1 cup panko crumbs
- 1/2 cup grated parmesan
- cooked egg noodles for serving

- Preheat oven to 400 degrees F. In a large oven-proof skillet or Dutch oven, over medium heat, heat 1 tablespoon of olive oil. Add onion and cook until soft, 5 minutes. Add a little more olive oil and chicken, season with salt and pepper, and continue to cook until the chicken is just cooked through. Add broccoli and cook until bright green and starting to soften, about 3-4 minutes. Deglaze the pan with balsamic and scrape up bits of flavor from the bottom. Add garlic and cook until fragrant 1 minute more.
- Add cream of chicken soup, milk, and cheddar. Bring to a simmer and cook until the cheese is melted. In a medium bowl combine 3 tablespoons of olive oil with panko and parmesan cheese. Sprinkle over the top of the casserole and bake until bubbly and golden, 25 minutes. Serve warm over pasta.
