- 2 tablespoons Fustini's Herbs de Provence olive oil
- 1 small yellow onion, finely chopped
- 3 tablespoons all-purpose flour
- 1 teaspoon paprika
- 1 1/2 cup whole milk
- 2 cups diced ham
- Kosher salt and freshly ground black pepper
- 2 lb. potatoes, sliced into 1/4" rounds
- 2 cups Swiss cheese (sliced or shredded)
- freshly chopped chives for serving
Directions
- Preheat the oven to 375 degrees. In a medium saucepan, heat olive oil. Add onion and cook until soft, stirring occasionally for about 4 minutes. Sprinkle flour and paprika over onions and cook, stirring constantly for 1 minute.
- While whisking, slowly pour the milk into the pan. Bring to a simmer and continue to whisk until thickened, about 3 minutes. Stir in ham and season with salt and pepper.
- Layer 1/2 of the sliced potatoes in the bottom of a 3quart baking dish (or 9x13) and season with salt and pepper. Spoon half of the sauce over and top with 1/2 of the cheese. Repeat with remaining potatoes, sauce and cheese.
- Cover dish with foil and bake until potatoes are soft, about 40 minutes. Remove foil and continue to bake until the cheese is golden and bubbly, about 25 minutes more. Remove from the oven and allow to sit 5-10 minutes to set. Sprinkle with chives before serving.
Recipe Note
For a more intense herb flavor, substitute with Garlic or Tuscan Herb olive oils. Adapted from delish.com
