Cherry Pear Salad with Goat Cheese

Ingredients
- spring mix or preferred green
- 1/2 cup dried cherries
- 2 pears, washed, cored and sliced
- goat cheese, large crumbles
- croutons
- 1/2 cup Fustini's Basil Crush olive oil
- 1/3 cup Fustini’s Traverse City Cherry balsamic vinegar
- 1 tablespoon wholegrain mustard
- salt and pepper
Cherry Vinaigrette
Directions
- In a large salad bowl, add dried cherries and pear slices. Add just enough Cherry Vinaigrette to coat pears and cherries. Toss in enough spring mix so that the greens have a light dressing coating.
- Prepare by combining all ingredients except oil. Continue whisking vinegar while adding oil at a slow drizzle.
