Chicken Enchilada Sliders

Ingredients
- 2 tablespoons Fustini's Aji Verde Crush olive oil, plus more for finishing
- 1 small onion, halved and thinly sliced
- 2 garlic cloves, minced
- 4 cups shredded chicken
- 1 (10-oz.) can of red enchilada sauce
- 1 tablespoon Farmstyle Sriracha
- Kosher salt & freshly ground black pepper
- 12 slider buns
- 2 1/2 cups shredded cheddar
- 2 cups green onions, thinly sliced
- Fustini's Alderwood Smoked salt

- Preheat oven to 350°,. In a large skillet over medium heat, heat olive oil. Add onion and garlic and cook, stirring occasionally, until softened, 5 minutes. Add shredded chicken, enchilada sauce, and Sriracha. Increase heat to medium-high and cook, stirring, until heated through, about 3 minutes. Season with salt and pepper. Remove from heat.
- Place the bottom half of the slider buns on a large baking sheet. Top with layers of chicken mixture, cheddar, and green onions. Put on top buns and brush with additional olive oil and sprinkle with smoked salt. Bake until the buns are golden and the cheese is melty about 10 minutes.
Recipe Note
Easy Cinco de Mayo or Tailgate treats or a quick way to use up leftover grilled or roasted chicken. For more heat, use Cayenne Crush olive oil. Adapted from delish.com
