Ingredients
- 4 tablespoons Fustini's Herbs de Provence olive oil, divided
- 2 lb. chicken, (skin-on, bone-in chicken thighs, recommended)
- Kosher salt & freshly ground black pepper1
- large onion, chopped
- 1 large carrot, peeled and chopped
- 1 celery stalk, chopped
- 8 oz. mushrooms, sliced
- 2 tablespoons all-purpose flour
- 1/2 cup white wine
- 1/4 cup Fustini's 12 Year White balsamic
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 2 tablespoons freshly chopped parsley
- 2 teaspoons fresh thyme leaves

- In a large high-sided skillet over medium heat, heat 2 tablespoons of olive oil. Season chicken on both sides with salt and pepper then add to skillet and cook until golden, 5 minutes per side. Remove from skillet and set aside on a plate.
- In the same skillet add the remaining olive oil, then add onion, carrot, celery, and mushrooms and cook until soft, 5 minutes. Add flour and cook for 1 minute. Pour in the wine, and the balsamic. scrape up any bits on the bottom of the pan and cook until liquid is mostly absorbed about 3-4 minutes.
- Add broth and stir to combine and bring to a simmer. Add cream and season with parsley, thyme, and salt and pepper. Add chicken back to the pan and simmer until chicken is cooked through and sauce is thickened 15 minutes.
