Chicken Parmesan Roll Ups

- 2 tablespoons Fustini's Tuscan Herb olive oil, plus more for the pan
- all-purpose flour, for rolling
- 2 tubes crescent rolls
- 2 small boneless, skinless chicken breasts
- Kosher salt & freshly ground black pepper
- 1 cup marinara sauce
- 1 cup grated Parmesan
- 1 cup grated mozzarella
- 1/4 cup chopped fresh basil

- Preheat oven to 350°,. Grease with olive oil an 8" round cake pan. On a lightly floured work surface, roll out each crescent roll of dough to 1 large rectangle, pinching together seams.
- In a large skillet over medium-high heat, heat olive oil. Cook chicken, turning halfway through, until golden brown and an instant-read thermometer inserted into the thickest part registers 165°,, 4 to 6 minutes per side, season with salt and pepper. Transfer to a cutting board and thinly slice.
- Spoon marinara all over each rectangle, then sprinkle with Parmesan and mozzarella. Top with chicken and basil. Starting from the bottom, tightly roll up each rectangle like a cinnamon roll, then slice each into 4 rolls. Transfer to prepared pan.
- Bake roll-ups until puffed and the crust is golden brown, 15 to 20 minutes. Transfer to a wire rack and let cool slightly.
Recipe Note
Substitute your favorite herb-infused olive oil. For a kick of heat, use the Arrabbiata sauce. Use leftover turkey for an even easier dish! Great for tailgating or movie night snack. Adapted from delish.com
