Ingredients
- 1 tablespoon Fustini's Basil Crush olive oil
- 2 garlic cloves, finely chopped
- 1 Roma tomato, diced
- 1/2 yellow onion, finely chopped
- 9 oz chicken sausage
- 1/2 tablespoon Fustini's Tuscan Spice blend, divided
- 3 tablespoons tomato paste
- 3 cups chicken stock
- 1/2 cup Israeli couscous
- 2 tablespoons shredded parmesan, for garnish
- fresh herbs (parsley, basil, oregano, thyme) chopped for garnish
- Kosher salt & freshly ground black pepper

- In a large pot heat olive oil over medium heat. Add onion and season with salt and pepper. Cook stirring often until softened, 4-5 minutes. Add chicken, garlic and 1/2 tablespoon of seasoning. Cook, breaking up meat into pieces, until browned and cooked through, 4-5 minutes.
- Add diced tomato and tomato paste to the pot with the sausage mixture. Cook, stirring until diced tomato is slightly broken down 2-3 minutes. Stir in 2 1/2 - 3 cups of chicken stock.
- Bring soup to a boil and stir in couscous. Cook, stirring often until couscous is al dente, 8-10 minutes. Add more stock if the soup seems too thick. Season to taste with salt and pepper. Serve soup with a garnish of parmesan cheese and fresh herbs.
Recipe Note
Substitute your favorite herb-infused olive oil. Serve with a slice of toasted bread or cheese bread. Adapted from everyplate.com
