Chipotle Grilling Marinade

Ingredients
- 1 cup Fustini's Chipotle olive oil
- 1 1/2 cups Fustini's Espresso Bean balsamic
- 3 cloves garlic 1 small shallot
- 2 teaspoons Alderwood Smoke salt
- 1 rack of pork ribs
- 2 tablespoons Fustini's Grilling Rub
- 2 tablespoons smoked paprika
- 1 tablespoon cumin
- 1 teaspoon cayenne pepper
- Kosher salt & freshly ground black pepper to taste

- Combine all olive oil, balsamic, garlic, and shallot and emulsify using a food processor. Save half of the marinade in a separate container for a basting liquid. Place ribs in an airtight container and pour the remaining marinade over, letting it soak the meat for 24 hours in the refrigerator.
- In the meantime, mix the remaining ingredients. When the meat has finished marinating, remove it from the marinade and blot off any extra liquid, discarding the used marinade.
- Preheat the grill. Cover pork with the dry rub, rubbing it all over with your hands. While grilling the pork, use the marinade (what you put to the side initially) by brushing the pork to infuse the sweet flavor of the balsamic marinade. Cook until desired or required doneness depending on the meat.
Recipe Note
This recipe can be easily modified to accommodate chicken or steak.
