Cilantro Lime Shrimp with Mango Salsa

Ingredients
- 1 pound large shrimp
- 1 tablespoon Fustini's Persian Lime olive oil
- 1 teaspoon minced garlic
- 1/4 cup chopped cilantro
- 1 tablespoon Fustini's Jalapeno Lime balsamic
- Kosher salt and fresh ground black pepper
- lime wedges for garnish
- toasted baguette for serving, optional
- 1 cup diced mango
- 1 cup diced avocado
- 1 tablespoon Fustini's Jalapeno Lime balsamic
- 1/2 cup minced red bell pepper
- 1/4 cup chopped cilantro
- 1/4 cup minced red onion
- salt to taste

Directions
- Heat olive oil in a large sauté, pan over medium-high heat. Pat the shrimp with a paper towel to dry and season with salt and pepper. Add the shrimp and cook until pink and opaque. Add the garlic and cook 1 minute more, stirring occasionally. Stir in balsamic and cilantro. Serve with Mango Avocado Salsa.
- Combine all ingredients and serve with shrimp.
Recipe Note
This is a great side salad, or use to top a baguette for an appetizer. Substitute for Chipotle or Cayenne Crush olive oil for more heat. Adapted from dinneratthezoo.com
