Ingredients
- 2 1-lb duck breasts
- Kosher salt and freshly ground black pepper
- 1 tablespoon Fustini's Robust SELECT olive oil, for searing
- Fustini's Sicilian Lemon balsamic, for garnish
- grated zest of 1 lemon
- grated zest of 1 orange
- juice of 1/2 lemon
- 1 tablespoon honey
- 2 cloves garlic, finely chopped
- 1 tablespoon freshly chopped thyme
- 1/2 teaspoon black pepper
- 1 tablespoon Fustini's Sicilian Lemon balsamic

Directions
- Rub marinade thoroughly over both sides of duck breasts. Cover with plastic wrap and refrigerate for 2 to 4 hours.
- Preheat the oven to 350F. Score the skin side of the breasts lightly. Season flesh side with salt. Meanwhile, in a large oven-proof skillet or grill pan, over medium heat, heat olive oil. Sear duck breasts, skin side down, for about 5 minutes. Season with salt and pepper.
- Transfer pan to oven, baking for about 8 minutes. Turn breasts over and bake for about 5 minutes, or until breasts are medium. Remove the pan from over and remove the duck and drain off excess fat, if necessary. Set duck aside for at least 5 minutes. Drizzle with additional balsamic before serving.
- In a small bowl combine all ingredients, mixing well.
