Corned Beef Cabbage Sliders

Ingredients
- 4 tablespoons Fustini's Medium SELECT olive oil, divided
- 1/2 cabbage head, cut into 1 1/2" slices (try to keep together as much as possible)
- 1 bottle of dark beer
- 8-10 ciabatta rolls
- 5 slices Provolone cheese
- 2-3 tablespoons Horseradish mustard
- 1 lb corned beef

- Preheat the oven to 350 degrees F. Heat 1 tablespoon of olive oil in a medium skillet on medium-high heat. Sear each side of the cabbage strip sides, about 1 minute per side.
- Place a cooling rack on top of a baking sheet. Place the cabbage slices on the rack and pour the beer over the cabbage so that it collects at the bottom of the baking sheet. Carefully place the sheet pan in the oven and bake for 20-22 minutes until the edges of the cabbage brown and crisp.
- On another baking sheet, slice the rolls open and lay them face up on the baking sheet. Drizzle the remaining olive oil over the cut sides of the rolls. On one half of each roll, lay 1/2 a slice of cheese. Place in the oven for 5 minutes until the rolls toast a little and the cheese melts.
- To assemble the sandwiches, spread a little mustard on one side, and top with meat and a few pieces of cabbage.
Recipe Note
