Ingredients
- 5 tablespoons Fustini's Gremolata olive oil, divided
- 2 lbs chicken, bone-in or boneless
- salt and pepper to taste
- 2 tablespoons Fustini's Citrus Oregano balsamic
- 1 lb baby red potatoes, quartered
- 5 garlic cloves, minced
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon Fustini's Parmesan Spice blend
- 2 tablespoons freshly grated Parmesan, plus more for serving

- In a large skillet over medium-high heat, heat 1 tablespoon olive oil. Add chicken, season with salt and pepper, and sear until golden, 3 minutes per side. Add balsamic in the last 30 seconds to pull up all bits of flavor.
- Meanwhile, in a large slow cooker, toss potatoes with the remaining olive oil, garlic, thyme, parsley, and Parmesan and season generously with salt, pepper and other seasonings. Add chicken, any liquid from the pan and cook on high for 4 hours or low for 8 hours, until potatoes are tender and chicken is fully cooked. Garnish with Parmesan before serving.
