Ingredients
- 4 tablespoons Fustini's Garlic olive oil, divided
- 2 lb chicken cuts of choice
- salt and pepper to taste
- 1 lb baby potatoes, halved
- 1 red bell pepper, julienne
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- 2 teaspoons Fustini's Tuscan Spice blend
- fresh parsley for garnish

- In a large skillet over medium-high heat, heat 1 tablespoon olive oil. Add chicken, season with salt and pepper, and sear until golden, 3 minutes per side. Alternatively: If you have a slow cooker that sears, this is a great way to keep it to one pan. For Step 2, Remove the seared chicken and add other ingredients and place the chicken on top.
- Meanwhile, in a large slow cooker, combine potatoes, bell pepper, broth, cream, Parmesan, olive oil, and spices. Season with salt and pepper, then place chicken on top. Cook on high for 3 to 4 hours or on low for 6 to 8 hours, until potatoes are tender and chicken fully cooked. Garnish with parsley and more Parmesan, before serving.
