Ingredients
- 5 eggs
- 1/2 cup heavy cream
- 1/2 cup milk
- 1 cup chopped ham
- 8 oz shredded Swiss cheese
- 1 cup sautéed zucchini (2 cups before cooking)
- 1 teaspoon thyme
- salt and pepper to taste
- 1 tablespoon Fustini's Herbs de Provence olive oil

- Preheat the oven to 375°,F. Add 1 tablespoon of olive oil to the skillet over medium heat, add ham and sauté until lightly browned. Remove and set aside.
- In the same pan, add diced zucchini. Cook until slightly softened.
- Mix eggs, cream, milk, thyme, salt, and pepper in a bowl. In a lightly greased 8 or 9-inch pan, layer ham, most of the cheese and zucchini. Pour in egg mixture and top with remaining cheese. Bake in preheated oven for 35-40 minutes, until the knife or toothpick inserted in the center, comes out clean.
