Ingredients
- 1 15 ounces can of corn, or 2 cups cooked fresh corn cut from the cob
- 1 cup fresh blueberries
- 2 cups of shelled edamame
- 1 cucumber sliced and then cut slices in half
- ¼ cup finely chopped red onion
- ¼ cup chopped fresh cilantro
- 1 jalapeno pepper, seeded and finely chopped
- 1 tablespoon of lime juice
- 1 tablespoon of Fustini’s Jalapeno Lime balsamic
- 2 tablespoons of Fustini’s Cilantro and Onion olive oil
- 1 tablespoon of honey
- ½ teaspoon of ground cumin
- ½ teaspoon of salt

Directions
- In a serving bowl combine corn, blueberries, edamame, cucumber, onion, cilantro and pepper. In a separate small bowl, combine dressing ingredients and shake or whisk until well blended. Add dressing to salad and toss. Refrigerate until use, this salad can be made a day ahead
