Ingredients
- 1 pound ground pork
- 1 tablespoon Fustini's Garlic olive oil
- 2 garlic cloves, minced
- 1 onion, sliced
- 1 eggplant, cut into half-moons
- 1 red bell pepper, julienned
- 1/2 cup cherry tomatoes
- 1/4 cup soy sauce
- 1 tablespoon Fustini's Ginger and Honey balsamic
- 4 teaspoons Harwood Gold Sriracha
- 1 tablespoon Fustini's Sesame oil
- 1/2 lb green beans, cut into 2" pieces
- 1/2 cup green onion cut on the bias for garnish

- In a large skillet over medium-high, brown ground pork, breaking up with a wooden spoon. Transfer to a plate and set aside. Return pan to medium heat and warm olive oil. Sauté, garlic and onion until softened, about 4 minutes, then increase heat to medium-high and stir-fry eggplant, pepper and tomatoes for 2 to 3 minutes.
- Meanwhile, in a small bowl combine soy sauce, balsamic and Sriracha and Sesame oil, add to the skillet with green beans and pork. Sauté, until green beans are bright green and meat is warmed through. Top with green onion and serve immediately.
Recipe Note
A stir fry where you can add whatever veggies you have on hand, try adding mushrooms, zucchini or yellow squash. adapted from delish.com
