Five Minute Crispy Feta & Egg Smash Tacos

Breakfast, lunch, or dinner. This highly adaptable recipe became a viral sensation because it tastes amazing and only takes five minutes!
Ingredients

2 teaspoons Cilantro & Onion olive oil

3 tablespoons crumbled feta cheese
- 1 egg
- 1/4 teaspoon black pepper

1/4 teaspoon kosher salt
- 1 small tortilla
- 2 tablespoons smashed avocado
- 2 tablespoons microgreens for garnish, optional

1 teaspoon Peperoncino Garlic Crush olive oil, to drizzle
Directions
Heat a small fry pan or skillet over medium heat. Add the Cilantro & Onion olive oil and swirl the pan to coat the entire bottom of the pan.
Sprinkle the crumbled cheese around the perimeter of the pan, and cook uncovered for 1 minute until melted and starting to get crispy.
Crack the egg into a bowl. Using your hands, gently separate the egg yolk. Pour the egg white into the center of the pan and cook uncovered for 30-60 seconds until the egg whites are almost set. Then, gently add the egg yolk to the center of the pan, season the egg with kosher salt and pepper, cover, and cook for 30-60 seconds until the cheese is very crispy and the egg whites are fully cooked.
Warm the tortilla over your gas stove, or in the oven or microwave. Top the warmed tortilla with the smashed avocado in an even layer.
Top the tortilla with the crispy cheese fried egg, then top with microgreens or your favorite toppings and drizzle with Peperoncino Garlic Crush olive oil. Enjoy warm.
Recipe Note
This budget friendly, time saving recipe can be adapted in many ways:
Tortilla: works with both corn and flour, but be sure to use taco size.
Cheese: this recipe works with most low-moisture crumbled or shredded cheese, like Chihuahua, cheddar, or gruyere.
Avocado: mine wasn't ripe enough for great smashing, but slices work just as well.
Microgreens: feel free to substitute sprouts, herbs, shredded lettuce or grated carrot.
Add-in ideas: crumbled chorizo (as seen in the main recipe photo), diced fresh tomato, sour cream, sriracha
