Ingredients
- 2 cups julienne red beets
- 1 1/2 cups + 9 tablespoons sugar
- 2 1/3 cups of water
- 1 golden beet, peeled and julienne
- 3 ounces dark chocolate
- 3 1/2 ounces cocoa powder
- 8 tablespoons butter, softened
- 1 tablespoon Fustini’s Blood Orange olive oil
- 3 eggs

- Preheat the oven to 350 degrees. Place the red beets, one cup of water and one cup of sugar in medium size pan and bring to a simmer. Simmer beets for 30 minutes or until soft. Strain beets, reserving liquid. Place liquid back into the pan and bring to a simmer. Cook for another 30 minutes or until the syrup coats the back of a spoon. Let cool to room temperature.
- Place the gold beets in another pan with one cup water and 1/2 cup sugar. Bring to a boil and cook until just tender - 15 to 20 minutes. Strain and reserve.
- Place the last 5 tablespoons sugar and 1/3 cup water into a small pan and bring to a boil. Stir in dark chocolate, cocoa, butter, and olive oil. Mix until thoroughly combined. Place the eggs and 4 tablespoons sugar into the bowl of a stand mixer fitted with the paddle attachment and process until ribbons form. Fold the chocolate mixture into the whipped eggs, and then the julienne red beets.
- Place the last 5 tablespoons sugar and 1/3 cup water into a small pan and bring to a boil. Stir in dark chocolate, cocoa, butter, and olive oil. Mix until thoroughly combined. Place the eggs and 4 tablespoons sugar into the bowl of a stand mixer fitted with the paddle attachment and process until ribbons form. Fold the chocolate mixture into the whipped eggs, and then the julienne red beets.
- Pour the batter 3/4 the way up into 2 1/2-inch ring molds and bake in preheated oven until just cooked 20 to 25 minutes. Let cool before unmolding and serving with a garnish of golden beets and some of the sauce.
