Gouda, Bacon and Caramelized Onion Grilled Cheese

Ingredients
- 2 tablespoons Fustini's Herbs de Provence olive oil, plus more for drizzling
- 1 red onion sliced
- 1/4 teaspoon salt
- 1 tablespoon Fustini's 18 Year Traditional balsamic
- 4 slices of bread of choice
- 6 oz Gouda cheese, freshly grated
- 6 slices of cooked bacon
- 1 scallion, sliced

- Heat a large skillet over low heat and add olive oil. Add the onions and salt. Stir to coat. Cover and cook until the onions begin to caramelize, about 30 minutes, stirring every 5 minutes so they don't burn. Stir in the balsamic and cook for another 5-8 minutes, stirring once or twice more. Remove onions from heat.
- Heat a large skillet or griddle over medium-low heat. Drizzle olive oil on the outside of each of the bread slices. To assemble, add a handful of Gouda cheese on the first slice of bread, add half of the caramelized onion, 3 slices of bacon and another handful of cheese. Cook the sandwiches over medium-low heat until the bread is toasted and the cheese is melted, 5 minutes per side.
Recipe Note
Substitute your favorite herb-infused olive oil. Great side for dipping into soup. Adapted from "Seriously Delish."
