Ingredients
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- pinch of salt and pepper
- 3 tablespoons Fustini's Gremolata olive oil
- 1 shallot, minced
- 2 tablespoons capers
- 3 tablespoons chopped parsley
- 3 tablespoons celery leaves
- 3/4 pound halved green beans

Directions
- Whisk lemon juice, dijon mustard, a pinch of salt and olive oil in a bowl. Add shallot, capers, a handful each of chopped parsley and celery leaves, and a pinch of pepper. Boil green beans until crisp-tender, 4 minutes, drain and add to the dressing along with a few thinly sliced celery ribs.
