Ingredients
- 1/2 cup onion, minced
- 1/2 cup cucumber, peeled, seeded and cut into small dice
- pinch salt
- 1/4 cup green pepper, very fine dice
- 1 garlic clove, minced
- 1 stalk celery, very fine dice
- 1/2 jalapeno, seeded and minced
- 1/4 cup vegetable stock
- 1 tablespoon fresh cilantro, chopped
- juice of 1/2 lime
- fresh cracked black pepper
- 1 teaspoon Fustini's 12 Year White Balsamic Vinegar
- 1 tablespoon Fustini's Delicate SELECT olive oil

Directions
- Place onions and cucumber in a bowl and sprinkle with salt. Let sit for 20 minutes then strain and rinse with cold water. Dry then place into a bowl with the rest of the ingredients.
