Grilled Chicken Tacos with Lime Slaw

Ingredients
- 1 pound chicken breasts
- 3 tablespoons Fustini's Chipotle olive oil
- 1 lime, zest freshly grated
- 2 garlic cloves, minced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- ½ teaspoon salt
- ½ teaspoon pepper
- 8 to 12 corn or flour tortillas
- for topping: sour cream, thinly sliced radish, cotija cheese, avocado
- 3 cups shredded green cabbage
- 2 limes, zested
- 1 small shallot, thinly sliced
- 1 garlic clove, minced
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon Fustini's Persian Lime olive oil
- 2 teaspoons Fustini's Jalapeno Lime balsamic
- ½ teaspoon salt
- ½ teaspoon pepper

Directions
- Combine olive oil, lime zest, garlic and spices with the chicken and marinate in the refrigerator for at least 30 minutes or overnight. Remove from the refrigerator at least 30 minutes before grilling. Preheat grill to the highest setting. Place chicken on hot grill and cook 5 minutes per side until golden and charred with an internal temperature of 165 degrees. Remove from heat and allow to rest 10 minutes before slicing.
- In a large bowl combine. cabbage, lime zest, shallot, garlic and cilantro. Add the olive oil, balsamic, salt and pepper. Toss well to combine and allow to sit to meld flavors.
- To Serve: fill the tortillas with the chicken and optional toppings and lime slaw.
