Grilled Corn and Tomato Salad with Marinated Feta

Ingredients
- 3 ears of corn, husked
- 2 tomatoes, diced
- 6 oz Feta cheese
- 2 tablespoons Fustini's Cayenne Crush olive oil
- 1/3 cup Fustini's Gremolata olive oil
- 1 tablespoon Fustini's 12 Year White balsamic
- 1/4 cup basil leaves
- Kosher salt & freshly ground black pepper to taste

- In a small bowl pour olive oils over feta and allow to marinate for at least 1 hour.
- Grill corn over high heat until kernels just begin to brown, remove and cover to allow the corn to steam itself.
- While the corn steams, dice the tomato, cut the feta into similar-sized pieces, and place in a large bowl. Cut the kernels off the corn cob and combine them in a large bowl with the tomatoes, and cheese. Add the balsamic, basil and season to taste before serving.
