Grilled Salmon with Greek Salad

Ingredients
- 6 oz low-fat Greek Yogurt
- 4 tablespoons Fustinis' Citrus Oregano balsamic, divided
- Kosher salt & freshly ground black pepper
- 2 tablespoons chopped mint
- 2 tablespoons chopped dill
- 4 - 6oz salmon filets
- 3 tablespoons Fustini's Gremolata olive oil, divided
- 1/2 teaspoon oregano
- 1 1/2 lb tomatoes, cut into small wedges
- 1 seedless cucumber, cut into 1/2" pieces
- 1/4 red onion, thinly sliced
- 1 tablespoon Fustini's Parmesan Spice blend

Directions
- In a small bowl, combine yogurt, 2 tablespoons of vinegar, and pepper to taste. Fold in mint and dill. Set aside.
- Heat grill to medium-high. Pat salmon dry and season with salt and pepper. Drizzle both sides of filet wit ht2 tablespoons of olive oil. Grill for 3-5 minutes per side until opaque throughout. Remove from heat.
- In a large bowl, whisk together the remaining vinegar and olive oil. Season with salt, pepper and spice blend, and toss in tomatoes, cucumber, and onion. Serve alongside the salmon and garnish with the yogurt sauce.
