Grilled Sausage Vegetable Foil Packets

Ingredients

- 3/4 pound fresh green beans, trimmed and halved
- 1/2 pound red potatoes, 1" diced
- 1 onion, sliced
- 1 pound smoked sausage, cut into 1" pieces
- 1-pint grape tomatoes
- Kosher salt & freshly ground black pepper
- 4 slices of your favorite melty cheese (American, Provolone, etc)
- Fustini's Medium SELECT olive oil
Directions
- Preheat an outdoor grill for high heat. In a small pot of salted water add potatoes and bring to a boil. Continue cooking until potatoes begin to soften. With a slotted spoon, remove potatoes and add beans. Turn off the heat and allow beans to slightly blanch.
- Cut 4 pieces of foil approx 15" wide. In the center of each, divide the potatoes, beans, onions, meat, and tomatoes. Top with a slice of cheese, salt, and pepper. Drizzle about 1 tablespoon of olive oil on top of the ingredients.
- Bring the long ends of the foil up to meet each other and roll/fold over several times to seal. Seal up each end of the packet and place packets on a baking sheet.
- Place foil packets on the prepared grill. Cook 20-25 minutes, turning once as needed until vegetables are tender and cooked.
Recipe Note
Make and take to your next cook-out picnic! This is a great recipe to add in other vegetables. Substitute your favorite herb-infused olive oil. Adapted from allrecipes.com
