Grilled Steak and Potato Skewers

Ingredients
- 1 lb. sirloin, cut into 1" pieces
- 2 tablespoons rosemary, chopped
- 4 tablespoons Fustmini’s Tuscan Herb olive oil, divided
- 1 tablespoon Fustini's Grilling Rub
- 1 lb. baby Yukon potatoes
- 2 tablespoons Dijon mustard

- Preheat the grill to medium-high. Soak skewers in water for 20 minutes.
- In a medium bowl, toss steak with 2 tablespoons of olive oil, 1 tablespoon of rosemary, and grilling rub. Season with salt and pepper to taste. Let meat marinate while preparing potatoes.
- Place potatoes in a large microwave-safe bowl. Cover and microwave until just tender, about 6 minutes. Set aside until cool enough to handle. Toss with 2 tablespoons of olive oil, and 1 tablespoon of rosemary and add mustard. Season with salt and pepper to taste.
- Thread steak and potatoes onto skewers. Grill, turning occasionally until the steak is cooked to the desired doneness.
