Grilled Thai-Inspired Cauliflower Steak

Ingredients
- 1 large cauliflower head, outer leaves removed,
- 1 tablespoon Fustini's Ginger Crush olive oil
- Kosher salt and freshly ground black pepper
- 1/4 cup freshly chopped cilantro
- 1 small shallot, finely diced
- 1 small garlic clove, minced
- 1 tablespoon brown sugar
- 1 tablespoon soy sauce
- 1 tablespoon Fustini's Ginger & Honey balsamic
- 1/2 teaspoon crushed red pepper flakes
- juice and zest of 1 lime
- 1/4 cup chopped salted peanuts

- Heat grill to medium. Place cauliflower stem-side down on cutting board and cut into 1" thick &ldquo,steaks.&rdquo, Rub olive oil all over and season both sides with salt and pepper. Grill cauliflower 8 minutes per side, covered, until charred and tender.
- Meanwhile, in a small bowl, stir together cilantro, shallot, garlic, brown sugar, soy sauce, balsamic, red pepper flakes, lime juice and zest. Transfer grilled cauliflower to a platter, spoon over sauce and sprinkle with peanuts.
Recipe Note
For more spicy heat, add a little Cayenne Crush olive oil. Adapted from delish.com
