Ingredients
- 2 tablespoons Fustini’s Aji Verde Crush olive oil
- 1 small red onion, cut into ½-inch rings
- 1 red bell pepper, cut into ½-inch strips
- 1 small zucchini, cut ¼ inch rounds
- 1 small yellow squash, cut ¼ inch rounds
- 2 garlic cloves, minced
- salt and pepper to taste
- cilantro, minced for garnish
- crumbled queso fresco
- splash of Fustini’s Jalapeno Lime balsamic

- Preheat the grill to medium-high. Toss vegetables (minus onion) in a bowl with olive oil, salt pepper and garlic. Toss onion (with the same ingredients) in a separate bowl so the rings of the onion don't fall apart.
- Place vegetables in a single layer on a grill or grill pan and grill for 3-4 minutes or until grill marks appear on the vegetables. When done, put vegetables on a platter and garnish with queso fresco and cilantro and a splash of Fustini&rsquo,s Jalapeno Lime balsamic.
Recipe Note
If no grill pan is available, roast in the oven on a sheet pan at 400 degrees.
