Ingredients
- 4 chicken breasts
- Fustini’s Garlic olive oil for brushing
- 1 medium red onion, sliced
- 20 grape tomatoes
- 4 cups vegetables, prepared into bite-size pieces (squash, zucchini, asparagus, carrots, broccoli, potatoes) - adapt for Keto
- 4 teaspoons Fustini's Butter olive oil, divided
- Salt to taste
- 2 tablespoons Herbs of Naples balsamic
- Fustini's Riserva balsamic for garnish
- Foil for foil packet

- Cut 4 pieces of heavy-duty foil (about 18" square). Brush olive oil in the middle of each foil square. Place chicken breast in the middle of each foil square. Top chicken breast with 4-6 slices of red onion, 5 grape tomatoes, approximately 1 cup of prepared vegetables, and salt and pepper to taste. Drizzle with 1 teaspoon Fustini's Butter oil and the balsamic.
- Fold up the chicken and vegetables into foil packets. Grill on medium heat 7-9 minutes each side or bake at 400 for 15-20 minutes until internal temperature reaches 165 degrees. Open foil packet on plate, or remove contents to a plate. Drizzle with Fustini's Riserva balsamic.
