Hawaiian Chicken Skewers

Ingredients
- 2 tablespoons Fustini's Persian Lime olive oil
- 1/4 cup pineapple juice
- 1/4 cup soy sauce
- 2 tablespoons Fustini's Jalapeno Lime balsamic
- 1 teaspoon Farm-Style Sriracha
- 2 garlic cloves, minced
- 1 teaspoon grated ginger
- 1 1/2 - 2 lbs chicken breasts, cut into 1" pieces
- 1 1/2 cups cubed fresh pineapple
- 2 large bell peppers, (assorted colors) cut into 1" pieces
- 1 medium red onion, cut into pieces
- salt and black pepper to taste
- lime wedges, for serving

- Heat a grill to medium-high heat. Season skewers with salt and pepper. Grill skewers, turning occasionally until chicken is nicely charred and cooked through about 12 minutes. Serve with lime wedges.
- In a small bowl, combine olive oil, pineapple juice, soy sauce, balsamic, sriracha, garlic, and ginger. Pour into a large resealable bag and add chicken. Let marinate in the refrigerator for at least 2 hours. Thread chicken, pineapple, peppers, and onion onto skewers. (Discard bag with marinade.)
Recipe Note
If using wooden skewers, soak in water for 30 minutes before using.
