Hawaiian Salmon Sliders

Ingredients
- 8 ounces salmon, patted dry & chopped
- 1 green onion, sliced
- 1 teaspoon fresh ginger
- 1/3 cup Panko bread crumbs
- 1 teaspoon Farmstyle Sriracha
- 1 teaspoon sesame seeds
- 1/2 tablespoon Fustini's Sesame oil
- 2 tablespoons mayonnaise
- 1 tablespoon soy sauce
- 1 avocado, thinly sliced
- 4 Hawaiian rolls
- 4 slices pineapple
- 1 1/2 tablespoons Dijon mustard
- 1 tablespoon hoisin sauce
- 1 teaspoon Iron Fish honey
- 1 tablespoon Fustini's Ginger Crush olive oil

- In a large bowl, add salmon, green onions, and ginger. Add panko, sesame seeds, Sesame oil, mayonnaise, soy sauce, and sriracha (more to taste). Mix well to combine. For sliders divide and make into 4 small patties.
- Heat olive oil in a large non-stick pan over medium-high heat. Place patties in the pan to sear for 1 minute per side for medium doneness. Remove patties from pan.
- Reduce heat to medium and add pineapple slices, and cook until browned 1-2 minutes per side.
- In a small bowl, combine mustard, hoisin, and honey. Spread on both sides of the buns/rolls. Top with salmon patty, pineapple, and avocado slices.
Recipe Note
For a gluten-free version, use gluten-free panko and serve sliders on a lettuce leaf.
