Healthier Cheeseburger Casserole

Ingredients
- kosher salt & freshly ground black pepper
- 8 oz. whole-wheat elbow macaroni or penne
- 2 teaspoons Fustini's Tuscan Herb olive oil
- 1/2 cup finely chopped onion
- 1 tablespoon finely minced garlic
- 1 lb. ground turkey
- 1 teaspoon Fustini's Grilling Rub spice blend
- 2 tablespoons Fustini's 18 Year balsamic
- 2 (14.5-oz.) cans of diced tomatoes
- 2 tablespoons tomato paste
- 2 tablespoons yellow mustard
- 2 tablespoons dill pickle relish
- 1/2 cup reduced-fat cheddar
- diced tomatoes
- chopped parsley for garnish
Directions
- Preheat the oven to 350º,. Bring a large pot of salted water to a boil, add the pasta, and cook until al dente. Drain and set aside.
- Meanwhile, in a 12-inch ovenproof skillet over medium-high heat, heat olive oil. Add the onion and garlic and sauté,, stirring, until fragrant, 1 minute. Add the turkey and seasoning. Cook, stirring frequently until the turkey is browned on the edges. Add balsamic to deglaze.
- Add the canned diced tomatoes, tomato paste, mustard, and relish, then reduce heat to medium and stir until bubbling. Remove from heat and stir in the drained pasta. Smooth the top. Cover the top of the casserole with cheese. Bake until the cheese is melted and the mixture bubbles for 23 to 25 minutes. Garnish with diced tomatoes and parsley, and serve.
